Flour-less Banana Pancakes
These simple flour-less banana pancakes are great for any weekend morning! Loaded with nutrient rich ingredients like eggs, chia seeds, and flax seeds, you’ll be satisfied and ready to concur the day. Top it off with any berries or chocolate chips or mix them in to the batter for an added touch. Tip: Double or triple the recipe and store the extras in the fridge for ready-to-go pancakes all week long!

Ingredients
2 bananas
2 eggs
½ cup oats
1 tablespoon chia seeds
1 tablespoon flax seeds
½ teaspoon cinnamon
pinch of salt
Instructions
Add all ingredients in a blender or food processor.
Blend until it’s smooth or as smooth as you want it.
Grease a pan with oil (I used coconut oil) over medium heat.
Pour palm sized shapes of the batter onto the pan. Let cook for 2-3 minutes or check underneath with a spatula that edges are golden brown. Carefully flip and cook the other side another 2-3 minutes.
Serve with a drizzle of maple syrup and/or fresh fruit of your choice.
Enjoy immediately or save in a reusable container and reheat throughout the week.
