Broccoli Stem & Carrot Zoodles

Looks like pasta, feels like pasta, taste like pasta, but it is not pasta. Instead of tossing out the broccoli stem in the compost, spiralize it as a healthy pasta substitute for any quick and easy lunch or dinner. Not only can you have nutritious noodles made in minutes but you save money by use the whole food not just half.

Cook time: 15 mins / Servings: 4

Ingredients

  • 1 tablespoon lemon juice

  • salt to taste

  • ½ cup cherry tomatoes

  • 1 broccoli head with stem

  • 2 large carrots 

  • 2 tablespoons olive oil

  • 1 pinch red pepper flakes

Directions

  1. Slice the head off the broccoli, leaving as little stem on the florets as possible. Cut the bottom end of the stem so that it’s evenly flat. Spiralize the broccoli stem.

  2. For the carrots, cut off the two ends and spiralize.

  3. Place a large skillet over medium heat and add in olive oil. Once oil is heated, add in broccoli stems, florets, carrots, red pepper flakes, lemon juice and season with salt. Cook and cover for 7-10 minutes, stirring frequently.

  4. Transfer to a bowl and add in chopped cherry tomatoes, and any other toppings such as parmesan cheese, pesto, or roasted nuts. Enjoy!
