Chocolate Almond Pulp Cookies
This tasty, healthy almond cookie recipe rescues the almond pulp leftover after making homemade almond milk. Almond pulp is loaded with rich fiber and nutrients that should never be wasted. Save leftover pulp to make these nutty, nutritious, and gluten-free vegan cookies.

Ingredients
1 cup almond pulp
1 tablespoons melted coconut oil
2 tablespoons maple syrup
1/4 teaspoon vanilla extract
2 tablespoon coconut sugar
1 tablespoon shredded coconut
1/2 teaspoon baking soda
1 teaspoon ground flax
1/4 cup cocoa powder
1/3 cup chocolate chips
Directions
Preheat oven to 350 degrees.
In a large bowl combine together almond pulp, coconut oil, maple syrup, vanilla, sugar, shredded coconut, baking soda, ground flax, and cocoa powder
Mix until well incorporated.
Fold in the chocolate chips.
Roll into 1 inch balls and press into cookie shapes.
Flatten each ball with a fork in a crisscross pattern
Bake in the oven for 35 minutes.
